My Favorite Kitchen Pantry Granola
In my neverending quest of how to reuse almond pulp, I decided to create a recipe that would go perfectly with my homemade almond milk :)
Introducing my incredible almond pulp granola that is gluten-free, grain-free, and packed with protein. And unlike most store-bought granola, this recipe contains no refined sugar, sweetened instead with just a little maple syrup! So feel free to snack on this any time of day :)
DRY INGREDIENTS:
-3/4 cups GF rolled oats (my favorite is from Trader Joe's)
-1 cup almond pulp (leftover from your homemade almond milk)
-1/4 flax seeds
- 1/4 chia seeds
WET INGREDIENTS:
-3/4 cup coconut oil
-1/4 cup maple syrup
-1/3 cup almond butter
-2 tsp vanilla extract
-1/2 tsp salt
Directions:
1.Pre-heat oven to 325 F
2.Melt wet ingredients over low heat
3. Mix dry ingredients in a separate bowl
4. Add your melted caramel sauce to your dry and mix well.
5. Place on lined baking tray and bake for 50-60 minutes.
